Getting Started
First you need to select a space for your wood fired pizza oven.It’s best to keep away from areas that are close to tree branches or objects that could be damaged in any way by the heat generated by the oven.
To ensure that the base of your oven can’t be warped or damaged by frost, the foundation should be dug down several feet.
Laying the Foundation
Your wood fired pizza oven’s foundation can be made from most common building materials.  Concrete is standard however you might want to create a particular style or look for your foundation in which case you can use adobe, cob, mortar, rocks or a combination of materials that will give your oven a character all of its own.The prime objective is just to ensure that the structure is solidly built and that it’s able to withstand the heat generated.
Pouring the Slab
The hearth slab should be stabilised during curing with a wire framework.Remember to make sure you leave an opening for ashes to fall through if you are going to have an ash trap.
Building the Hearth
The hearth (oven floor) is made using the refractory firebricks supplied with the wood fired pizza oven D-I-Y kit.  These create a tough oven floor capable of absorbing tremendous amounts of heat.
Before you start, draw a mock-up of the layout of the hearth.This will enable measurements to be accurate when it comes to matching the hearth with the slab.
Placing the Vault
The dome is layered to provide for maximum heat retention.There are several layers – firstly the fire brick or refractory dome covered by ceramic fibre insulation, alfoil and chicken wire are the next layers with the final layer being the rendering.
Installation is easier with a prefabricated refractory dome as is can simply be laid on the top without needing to build a brick dome.  They are also better at retaining heat than standard fire bricked domes.
Letting it Rest
Generally you should leave the oven to settle and dry out for one week before using it to cook.
Finally, it’s time to light the fire and light up the eyes of your guests as you knead, rattle and roll delicious gourmet pizzas for everyone to enjoy.
